Hot Chocolate

In a medium saucepan, whisk together 113 g bittersweet chocolate, 15 g cocoa powder, and 2 g salt.

Gradually whisk in 206 g whole milk and 196 g heavy cream until smooth.

Cook over medium heat, whisking constantly, until the mixture is hot and slightly thickened.
