1Thoroughly wash the Maesil under cold running water to remove any dirt or impurities. Gently remove the small stems from each Maesil using a toothpick or a small knife. Discard any bruised or damaged Maesil.
2Spread the cleaned Maesil on a clean cloth or paper towels and allow them to air dry completely. This is a critical step to prevent mold formation during fermentation. Ensure there is no moisture remaining on the surface of the Maesil.
3Sterilize a large glass jar (approximately 4-5 liter capacity) by washing it with hot soapy water, rinsing thoroughly, and then drying it completely, or by sterilizing it in boiling water and allowing it to air dry. Ensure the jar is completely dry before use.
