1Carefully clean the flor de maguey by removing the tough stem, pistils, and stamens. Rinse thoroughly under cold water.
2Bring a pot of water to a rolling boil. Add the cleaned flor de maguey and blanch for 5 minutes. Drain the flor de maguey and gently squeeze out any excess water. Coarsely chop the blanched flor de maguey.
3Finely dice the white onion, serrano chile, and Roma tomato.
