1Rinse the Raw peanuts thoroughly and soak them in a bowl of Water for at least 30 minutes, or preferably 2 hours.
2Place the Pork spare ribs in a large pot and cover with cold Water. Add half of the Ginger slices and all of the Scallion. Bring to a rolling boil over high heat. Skim off any foam and impurities that rise to the surface. Continue boiling for 5 minutes, then drain the Pork spare ribs and rinse them under cold running Water to remove any remaining scum.
3In a large, clean soup pot, combine the blanched Pork spare ribs, the soaked Raw peanuts (drained), the Lotus root, and the remaining Ginger slices.
