1Wash the Quince thoroughly. Peel, core, and chop the Quince into small, uniform cubes of approximately 1-2 cm. Reserve the Quince seeds and any fibrous core pieces.
2Place the chopped Quince into a large, wide pot. Add the Granulated sugar evenly over the Quince.
3Gather the reserved Quince seeds and fibrous core pieces and tie them securely in a small cheesecloth pouch. Place this pouch in the pot with the Quince and Granulated sugar. This will help with pectin release and color development.
