1Place the tamarind in a bowl and pour 200 grams of hot water over it. Let it soak for 30 minutes to soften.
2After soaking, mash the softened tamarind thoroughly with your hands. Pass the tamarind pulp through a fine-mesh sieve, pressing firmly to extract all the liquid and pulp. Discard any remaining fibrous residue.
3In a small saucepan, combine the jaggery with 100 grams of water. Heat gently over low heat, stirring until the jaggery dissolves completely. Strain this jaggery syrup through a fine-mesh sieve to remove any impurities.
