Rinse azuki beans thoroughly and place them in a pot with 400g of water. Bring to a boil over medium-high heat.

Once boiling, reduce heat to low and simmer the azuki beans for 5 minutes. Drain the water and discard it.

Return the azuki beans to the pot with another 400g of fresh water. Bring to a boil, then reduce heat to low and simmer for about 20-30 minutes, or until the beans are tender but still firm, and the water has turned a reddish-pink color. Do not overcook them until they burst.
