1Prepare the vegetables: Slice the eggplant, green bell pepper, and sweet potato as specified. Clean the shiitake mushrooms.
2Prepare the shrimp: Peel and devein the shrimp, leaving the tails on. Make 2-3 small, shallow incisions on the belly side of each shrimp to prevent curling during frying.
3Make the tentsuyu: In a small saucepan, combine the dashi, soy sauce, mirin, and sake. Bring the mixture to a gentle simmer over medium heat, then remove from heat and set aside to keep warm.
