1In a large bowl, marinate the Chicken with 5g of Salt, 2g of Turmeric, 5g of Red chili powder, and 10g of Ginger-garlic paste. Mix well and set aside for at least 30 minutes.
2Heat Cooking oil in a heavy-bottomed pan or pot over medium heat. Add Mustard seeds, Cumin seeds, Fenugreek seeds, and Curry leaves. Allow them to splutter and become fragrant (this is the tadka).
3Add the finely chopped Onions to the pan and sauté until they turn golden brown, about 8-10 minutes.
