1Prepare the aromatics: Slice the Fresh ginger, mince the Garlic cloves, and chop the Scallions, separating the white and green parts.
2Marinate the Pork loin: In a small bowl, combine the thinly sliced Pork loin with 5 grams of Light soy sauce and 5 grams of Shaoxing wine. Mix well and set aside for 10 minutes.
3Blanch the Bok choy: Bring a small pot of water to a boil. Quickly blanch the Bok choy for 30-60 seconds until just tender-crisp. Remove and set aside.
