1Cut the Pork shoulder into 4-5 cm cubes. Pat the Pork shoulder dry with paper towels.
2Peel and finely dice the Yellow onion, Carrots, and Celery stalks to create a soffritto. Mince the Garlic cloves.
3In a large, heavy-bottomed pot or Dutch oven, heat the Extra-virgin olive oil over medium-high heat.
