1Slice the lean pork loin into thin strips. Marinate pork loin with 5g light soy sauce, 5g Shaoxing wine, 5g cornstarch, and 5g vegetable oil. Set aside for 15 minutes.
2Marinate the shrimp with 5g Shaoxing wine, 5g cornstarch, and 0.5g white pepper. Set aside for 15 minutes.
3If using dried bean curd skin, rehydrate it in warm water until soft, then drain and cut into bite-sized pieces. If using fresh bean curd skin, cut it directly into bite-sized pieces.
