Slice the Pork shoulder thinly. Reserve half of the sliced Pork shoulder for the topping and use the other half for the broth.

Peel and slice the Ginger. Separate the white parts of the Scallion from the green parts; slice the white parts for the broth and finely chop the green parts for garnish.

In a large pot, combine Water, the broth portion of the Pork shoulder, sliced Ginger, and sliced white parts of Scallion. Bring to a boil over high heat, then reduce heat to low and simmer for 30 minutes, skimming any foam that rises to the surface.
