1To prepare the pasta frolla, combine 250g of the "00" flour, 100g of the granulated sugar, 2g salt, and 5g of the lemon zest in a large bowl. Mix well.
2Add 125g cold unsalted butter, cut into small cubes, to the dry ingredients. Work the unsalted butter into the "00" flour mixture with your fingertips until it resembles coarse crumbs.
3Add 35g (approximately 2) of the egg yolks. Mix quickly until a dough forms. Do not overwork the pasta frolla.
