1Clean the fresh octopus thoroughly under cold running water, removing the beak and eyes. If frozen, thaw completely first.
2In a large pot, bring a generous amount of water to a rolling boil. Add 10 grams of sea salt, the black peppercorns, bay leaves, celery stalk, and carrot to the water.
3To tenderize the fresh octopus and curl its tentacles, dip the fresh octopus into the boiling water for 10 seconds, then remove it. Repeat this process two more times.
