Combine washed Japanese short-grain rice and 360g water in a rice cooker. Cook according to manufacturer's instructions.

While rice cooks, prepare sushi vinegar: In a small saucepan, combine rice vinegar, 20g sugar (for sushi vinegar), and 5g salt (for sushi vinegar). Heat gently until sugar and salt dissolve, do not boil. Let cool.
