1Prepare the Puttu: In a large bowl, combine Roasted Rice Flour and 5 grams of Salt. Gradually sprinkle Water over the flour, mixing with your fingertips until the mixture is crumbly and resembles wet sand. Ensure there are no lumps. Set aside for 10 minutes to hydrate.
2Prepare the Chicken Masala: Heat Coconut Oil in a large heavy-bottomed pan or pot over medium heat. Add Onions and sauté until golden brown, about 10-12 minutes.
3Add Ginger-Garlic Paste, Green Chilies, and Curry Leaves to the pan. Sauté for 2-3 minutes until the raw aroma disappears.
