1Prepare the aromatics: Peel and thinly slice the Ginger. Peel and finely mince the Garlic. Chop 10g of Scallions into 2-inch segments for the broth, and finely chop the remaining 10g for garnish.
2Wash the Bok Choy thoroughly and cut into halves or quarters depending on size.
3In a medium pot, bring the Chicken Broth to a gentle simmer. Add the sliced Ginger and the 2-inch Scallion segments to the broth. Let it simmer for 10 minutes to infuse the flavors.
