1Clean pork skin thoroughly, scraping off any fat or hair. Blanch the pork skin in boiling water for 5 minutes, then rinse and scrape again. Cut the cleaned pork skin into small pieces.
2Combine the cut pork skin, 500 grams of water, sliced ginger, white parts of scallions, and 15 grams of Shaoxing wine in a pot. Bring to a boil, then reduce heat and simmer for 2-3 hours until the pork skin is very tender and the liquid is reduced.
3Remove the sliced ginger and white parts of scallions. Blend the pork skin and liquid until smooth. Strain the mixture through a fine-mesh sieve to remove any solids.
