Clean pork skin thoroughly, scraping off any fat or hair. Blanch the pork skin in boiling water for 5 minutes, then rinse and scrape again. Cut the cleaned pork skin into small pieces.

Combine the cut pork skin, 500 grams of water, sliced ginger, white parts of scallions, and 15 grams of Shaoxing wine in a pot. Bring to a boil, then reduce heat and simmer for 2-3 hours until the pork skin is very tender and the liquid is reduced.
