1Heat the vegetable oil in a medium pot over medium heat.
2Add the chopped white onion and minced garlic cloves to the pot and sauté until softened and translucent, about 5 minutes.
3Stir in the diced roma tomatoes and deseeded serrano chile. Cook for another 5-7 minutes until the tomatoes have softened and released their juices.
