1Cut the Lamb shoulder, Pork belly, Chicken wings, and Beef sirloin into bite-sized pieces, approximately 2-3 cm cubes. For Chicken wings, cut them into two pieces at the joint.
2Mince the Fresh ginger and Garlic finely. In a large bowl, combine the Light soy sauce, Shaoxing wine, minced Fresh ginger, minced Garlic, White pepper, and Sesame oil to create the marinade.
3Add all the cut Lamb shoulder, Pork belly, Chicken wings, and Beef sirloin to the marinade. Toss to coat evenly and let marinate for at least 30 minutes at room temperature, or up to 2 hours in the refrigerator.
