1Rehydrate Dried Shiitake Mushrooms and Dried Shrimp by soaking them in warm water for 20 minutes. Drain thoroughly. Slice the rehydrated Dried Shiitake Mushrooms thinly and set aside with the Dried Shrimp.
2Place Rice Vermicelli in a large bowl and cover with hot water. Let it soak for 5-7 minutes until pliable but still firm. Drain thoroughly and set aside.
3Heat 15 grams of Peanut Oil in a large wok over medium-high heat. Pour in the beaten Eggs and scramble until just set. Remove the scrambled Eggs from the wok and set aside.
