1Pour 50 grams of Water into a small bowl and sprinkle the Gelatin powder evenly over the surface. Let it sit for 5 minutes to bloom.
2In a medium saucepan, combine the remaining 150 grams of Water and the Granulated sugar. Heat over medium-low heat, stirring constantly, until the Granulated sugar is completely dissolved. Do not boil.
3Reduce the heat to low and add the Coconut milk and Evaporated milk to the saucepan. Stir gently until the mixture is well combined and warmed through, but do not bring it to a boil.
