1Rinse Basmati rice and Urad dal separately until water runs clear. Soak Basmati rice in water for at least 4 hours and Urad dal for 2 hours.
2Drain the soaked Basmati rice and Urad dal. Grind them together with a minimal amount of water to form a smooth, thick batter.
3Transfer the batter to a large bowl, cover it, and let it ferment in a warm place for 8-12 hours, or until it has risen and become slightly sour.
