1Blanch pork bones in boiling water for 5 minutes, then rinse thoroughly under cold water to remove impurities.
2Place blanched pork bones in a large pot with 3000g of water. Bring to a boil, then reduce heat and simmer for at least 60 minutes, skimming any foam that rises. Strain the broth and set aside.
3Slice ginger, mince garlic, and cut scallion into 5cm segments.
