1Thoroughly clean the Beef tripe under cold running water. Blanch the Beef tripe in boiling water with 20 grams of Ginger slices and 20 grams of Shaoxing wine for 5 minutes, then drain and slice into thin strips.
2Slice the remaining Ginger into thin pieces. Smash and peel the Garlic cloves. Cut 30 grams of Scallions into 5 cm segments, reserving the remaining 30 grams for garnish.
3Heat the Vegetable oil in a large pot or wok over medium heat. Add the sliced Ginger, smashed Garlic, and Scallions segments, stir-frying until fragrant, about 2 minutes.
