1To prepare Pathiri: Bring 300 grams of Water to a rolling boil in a wide pan with 3 grams of Salt and 5 grams of Coconut oil.
2Once boiling, reduce heat to low and add the Finely ground rice flour all at once. Stir vigorously with a wooden spoon until a dough forms and no dry flour remains.
3Cover the pan and let the dough rest for 5 minutes off the heat.
