1In a small bowl, dissolve the Fresh yeast in 100 grams of the Warm water. Let it sit for 5 minutes until foamy.
2In a large mixing bowl, combine the 00 flour, Semolina flour, and 10 grams of Fine sea salt. Make a well in the center.
3Pour the yeast mixture and the remaining 275 grams of Warm water into the well. Add 30 grams of Extra-virgin olive oil.
