1Heat the Vegetable oil in a large non-stick skillet over medium-high heat.
2Add the diced Russet potatoes to the hot oil. Cook, stirring occasionally, until the Russet potatoes are tender and lightly browned, about 10-15 minutes. Season the Russet potatoes with a pinch of Kosher salt and Black pepper while cooking.
3Once the Russet potatoes are tender, add the finely diced White onion, Serrano chile, and diced Roma tomato to the skillet. Sauté for 5-7 minutes, or until the White onion is translucent and the Roma tomato has softened.
