1Rehydrate dried wood ear mushrooms and dried shiitake mushrooms in warm water for at least 30 minutes. Once soft, drain, squeeze out excess water, remove shiitake stems, and thinly slice both types of mushrooms.
2Cut pork tenderloin into thin strips. In a small bowl, marinate the pork tenderloin with 5 grams of Shaoxing wine and 5 grams of light soy sauce for 10 minutes.
3Prepare firm tofu, bamboo shoots, ginger, garlic, and scallions as specified in the ingredients list.
