1In a large saucepan, combine the milk, Mexican cinnamon stick, and vanilla bean (split lengthwise). Bring to a gentle simmer over medium heat, stirring occasionally. Do not boil.
2Remove from heat and let the milk mixture infuse for at least 30 minutes. Remove the Mexican cinnamon stick and vanilla bean. Scrape the seeds from the vanilla bean back into the milk and discard the pod.
3Return the milk to medium heat and add the granulated sugar, stirring until completely dissolved. Bring back to a gentle simmer.
