Rinse the Chicken pieces thoroughly under cold running water. Bring a large pot of Water to a boil, add the Chicken and blanch for 5 minutes. Skim off any foam, then drain the Chicken and rinse again to remove impurities.

Place the rehydrated Dried shiitake mushrooms and sliced Dried bamboo shoots at the bottom of a large clay pot or heavy-bottomed pot.

Arrange the blanched Chicken pieces on top of the mushrooms and bamboo shoots.
