1Soak the Sweet potato glass noodles in warm water for at least 30 minutes, or until pliable. Drain and set aside.
2Finely mince the Garlic and Ginger. Chop half of the Scallions into 1cm pieces and thinly slice the remaining Scallions for garnish. Roughly chop the Dried red chilies. Chop the Preserved mustard greens into small pieces. Roughly chop the Cilantro and Roasted peanuts for garnish.
3Heat 10 grams of Cooking oil in a wok or large pan over medium-high heat. Add the Minced pork and stir-fry until browned and cooked through, breaking it apart with a spatula. Remove the Minced pork from the wok and set aside.
