1In a heavy-bottomed pan, combine the water and sugar. Bring to a boil over medium heat, stirring until the sugar completely dissolves. Reduce heat to low and keep the sugar syrup warm.
2In a separate small pan, heat 5 grams of the ghee. Add the almonds and cashews, and lightly roast until they turn golden. Add the raisins and roast for another 30 seconds until they plump up. Remove the roasted almonds, cashews, and raisins and set aside for garnish.
3In the heavy-bottomed pan (or a separate large kadai), melt the remaining 95 grams of ghee over low heat.
