1Wash the Japanese short-grain rice thoroughly until the water runs clear, then soak it in cold water for at least 30 minutes. Drain well before use.
2Prepare the Gobo: Scrub the Gobo clean, then shave or julienne it into thin strips. Immediately soak the Gobo in a bowl of cold water with a splash of vinegar (not listed as ingredient, for soaking only) for 10 minutes to remove bitterness, then drain thoroughly.
3Cut the Chicken thigh into 1.5 cm cubes. Slice the Carrot into thin matchsticks. Remove the stems from the Shiitake mushrooms and thinly slice the caps.
