1Combine All-purpose flour and Salt in a large bowl. Gradually add Water, mixing until a shaggy dough forms. Knead for 5 minutes until smooth. Cover and let rest for 30 minutes.
2While the dough rests, prepare the stir-fry ingredients. Thinly slice the Pork loin. Roughly chop the Napa cabbage. Julienne the Carrot. Rehydrate Dried shiitake mushrooms, then slice them. Separate Scallions into white and green parts, then slice both. Mince the Ginger and Garlic.
3Bring a large pot of Water to a rolling boil. Take small pieces of the rested dough and tear or pinch them into irregular, thumb-sized 'ge da' (flour lumps). Drop the ge da into the boiling water and cook until they float to the surface and are tender, about 3-5 minutes. Drain thoroughly and set aside.
