1Bring a large pot of water to a rolling boil. Add salt, then add spaghetti and cook according to package directions until al dente. Reserve 100 grams of pasta water before draining the spaghetti.
2While the spaghetti cooks, heat olive oil in a large skillet or wok over medium heat. Add onion and minced garlic, sautéing until fragrant and softened, about 3 minutes.
3Add shrimp, diced zucchini, and sliced king oyster mushrooms to the skillet. Cook for 3-4 minutes until the shrimp begin to turn pink and the vegetables soften slightly.
