1Clean fresh cockles by scrubbing them thoroughly under cold running water. In a large bowl, combine the fresh cockles with 10g of salt and enough cold water to cover. Let them soak for 30 minutes to purge any sand, then rinse several times until the water runs clear.
2Bring a large pot of water to a rolling boil. Add the cleaned fresh cockles and cook for about 30 seconds to 1 minute, or until just a few shells begin to open. Immediately drain the cockles and rinse them under cold water to stop the cooking process.
3Once cooled, carefully shuck the cockles, removing the meat from their shells. Discard the shells.
