1Rinse the Dried Omija gently under cold running water to remove any dust. Place the Dried Omija in a bowl and pour 250 grams of Water over them. Let them rehydrate for at least 6 hours, or overnight, until plump. Strain the omija, reserving the soaking liquid. Discard any seeds.
2In a small saucepan, combine the Fresh Ginger with 100 grams of Water. Bring to a boil, then reduce heat and simmer for 10 minutes to create ginger-infused water. Strain and reserve the ginger water, discarding the Fresh Ginger slices.
3In a wide, shallow pot, combine the rehydrated Dried Omija, the reserved omija soaking liquid, the reserved ginger water, and the Granulated Sugar. Bring the mixture to a gentle boil over medium heat, stirring occasionally until the Granulated Sugar dissolves.
