1In a medium bowl, whisk together the egg yolks, whole egg, heavy cream, grated Parmesan cheese, koikuchi soy sauce, and mirin. Season the mixture with a pinch of black pepper.
2Dice the Bacon into small pieces. Heat a large skillet over medium heat. Add the Bacon and cook until crispy. Remove the crispy Bacon from the skillet, leaving approximately 10 grams of rendered bacon fat in the pan.
3Add the minced Garlic to the skillet with the rendered bacon fat and sauté for 30 seconds until fragrant, being careful not to burn the Garlic. Remove the skillet from the heat.
