Thoroughly wash the Pumpkin leaves under cold running water. Carefully peel the tough, fibrous outer skin from the stems of each Pumpkin leaf.

Arrange the cleaned Pumpkin leaves in a single layer in a steamer basket. Steam over boiling water for 5 to 7 minutes, or until the Pumpkin leaves are tender and vibrant green.

While the Pumpkin leaves are steaming, prepare the dipping sauce. In a small bowl, combine the Doenjang, Gochugaru, minced Garlic, Sesame oil, Toasted sesame seeds, chopped Scallions, and Water. Mix well until all ingredients are thoroughly incorporated and the sauce reaches a smooth, dip-like consistency.
