1Cut the whole chicken into 8-10 pieces. Rinse the chicken pieces thoroughly under cold water. Blanch the chicken in boiling water for 5 minutes, then drain and rinse again to remove impurities. Set aside.
2Peel the potatoes and carrots, then cut them into large, bite-sized chunks. Peel and slice the yellow onion into thick wedges. Slice the Cheongyang green chili peppers and red chili peppers diagonally.
