1Wash and peel the carrots thoroughly, then grate them finely using a food processor or a hand grater.
2Heat 60 grams of ghee in a heavy-bottomed kadai or large pan over medium heat.
3Add the grated carrots to the hot ghee and sauté for 10-12 minutes, stirring continuously, until their raw smell disappears and they soften slightly.
