1. Thoroughly wash the chopped Duck pieces. Bring a large pot of water to a rolling boil. Add the Duck pieces and blanch for 5 minutes to remove impurities. Drain the Duck and rinse under cold water, then pat dry.

2. Prepare all vegetables: slice the Ginger, mince the Garlic, chop the Scallion, cut the Dried chili, slice the Red bell pepper, slice the Celery, cut the Onion, and slice the Potato.

3. Heat a wok over high heat. Add 50 grams of Cooking oil. Once hot, add the sliced Potato and fry until golden brown and slightly crisp. Remove the fried Potato from the wok and set aside.
