11. Prepare the dough: In a large bowl, combine All-purpose flour and 5 grams of Salt. Gradually add 150 grams of Water, mixing until a shaggy dough forms. Knead on a clean surface for 7-10 minutes until smooth and elastic. Cover the dough with a damp cloth and let it rest for at least 30 minutes.
22. Prepare filling vegetables: Rehydrate 30 grams of Dried shiitake mushrooms in warm water until soft, then squeeze out excess water and finely chop. Julienne the Zucchini, then lightly salt it and let sit for 10 minutes. Squeeze out as much liquid as possible from the Zucchini. Press the Tofu to remove excess water, then crumble it finely.
33. Sauté filling ingredients: In a pan, lightly sauté the chopped Dried shiitake mushrooms and Zucchini until slightly tender. Set aside to cool.
