1In a large bowl, combine All-purpose flour, 10 grams of Granulated sugar, Instant dry yeast, and Baking powder. Gradually add Water and mix until a shaggy dough forms. Knead the dough on a clean surface for 8-10 minutes until it is smooth and elastic. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it proof in a warm place for 60-90 minutes, or until it has doubled in size.
2While the dough is proofing, prepare the filling. In a mixing bowl, combine the diced Pork belly, chopped Fresh shrimp, diced Fresh bamboo shoots, minced Scallions, and minced Fresh ginger.
3Add Shaoxing wine, Light soy sauce, Sesame oil, Ground white pepper, 5 grams of Granulated sugar, and Fine sea salt to the filling mixture. Mix thoroughly in one direction until the filling becomes cohesive and slightly sticky.
