1Soak 200g shiro-ingen mame in 1000g water overnight (at least 8 hours).
2Drain the soaked shiro-ingen mame and place them in a pot with fresh water, ensuring beans are covered by at least 5cm. Bring to a boil, then reduce heat and simmer for 15 minutes. Drain and rinse.
3Return the shiro-ingen mame to the pot with fresh water, cover again, and simmer over low heat for 1.5-2 hours, or until very soft. Skim any foam.
