1In a large mixing bowl, combine Gram flour, Atta flour, Salt, Turmeric powder, Red chili powder, Cumin seeds, Asafoetida, and crushed Kasuri methi. Mix thoroughly.
2Add the finely chopped Onion, finely chopped Green chili, chopped Fresh cilantro, Ginger-garlic paste, and 30 grams of Ghee to the dry ingredients. Mix well, ensuring the Ghee is evenly distributed and the mixture resembles coarse crumbs.
3Gradually add Water, a little at a time, and knead the mixture into a firm, pliable dough. The dough should not be too soft or sticky. Cover the dough with a damp cloth and let it rest for 15 minutes.
