1Clean the whole Snapper thoroughly, pat dry, and make two diagonal slits on each side of the fish.
2Rub the whole Snapper lightly with white pepper and a small amount of Shaoxing wine inside and out.
3Roughly chop 10g of ginger and 10g of scallions into large pieces. Place these inside the cavity and on top of the whole Snapper.
